Let’s go ride a bike

Nolan’s balance bike bit the dust.  In truth, he left it out and I ran over it.  It lasted a few more weeks but the wood finally gave way last weekend.  We were talking with some friends about wanting to purchase a used bike for him to see if they knew of anyone that had a bike for sale.  My neighbor called me bright and early on Saturday and said that she was at a garage sale that had a bike that looked to be his size.  She sent me a picture so I woke Tim to look at it.  He was half asleep and asked what kind of bike, I looked at the picture and told him it said Trek.  He said, “buy it!”  I know nothing about bikes but I guess this was a good one.  We offered them $20 and they took it.  Once my fabulous neighbor delivered the bike, we looked it up online and it retails for over $200!

It rained most the weekend so Nolan didn’t get too much time on his new bike.  He had the balance part down but he didn’t know how to pedal.  It’s funny to think that my kids never really learned how to pedal.  Back in my day, we knew how to pedal from our Big Wheels.  Tim put the training wheels on so he could get the pedaling down and not keep pushing backwards to break.  Yesterday, we went over to a friend’s house and we took the training wheels off and off he went!  He’s a bike rider at 4 years old!

A pajama battle

I feel like I’ve conquered the day already!   I’m calling it and headed back to bed (I wish…this rainy day calls for it).  Nolan’s having pajama day.  Actually both kids have pajama day but with Janie, I set out clothes and she puts them on….easy peasy!  Nolan on the other hand, has his own ideas.  First, he wanted to wear footie pajamas.  Not a ideal for today since it’s warm and rainy.  I talked him out of those and then he went for the Superman pjs with a cape.  Great idea except for the fact that they’re a size 2T (he’ll be 5 in June).  They fit but the arms are short and the pants come just below the knee.  He was set on wearing them because everyone else will be wearing “awesome” pajamas.  I tried to tell him that they do not look awesome (my bad they haven’t made it to the hand me down bag).  He has other super hero pjs that fit so I told him he could wear those pants with the Superman shirt and cape.  This went on for at least 20 minutes and we even had to make a call to Tim so he could assure Nolan that the pants with super heros would go with the Superman shirt.  He finally chose to go with my suggestion.

CAM01464I’m so thankful that he wears a uniform 4 days a week.  However, next year he will get to wear what he wants to school.  What am I going to do?  How do you handle clothing battles?

Meals for Friends

Nothing says you care like a good meal!  I had a minor non-surgery this year and it meant so much to have our family and neighbors help out with the kids and feeding my family.  I know after having a baby how much a good, hot meal means, even if you have to eat while cradling a sweet newborn.  I can only imagine how helpful it is while going through chemo to not have to worry about what you and your family are going to eat.  Our church asks for side dishes often for senior lunches and funeral receptions.  I always try to have aluminum pans on hand so I can help out.  Here are some of my go to recipes:

Chicken Enchiladas

Cheeseburger Casserole

Chicken and Stuffing

3 – 4 chicken breasts

Swiss cheese

1 can cream of chicken soup

.5 cups milk

2 cup Pepperidge Farm stuffing mix

2 T. butter

In a casserole dish, place a piece of Swiss cheese on each piece of chicken.  Mix soup with milk in a bowl and pour over chicken.  Melt 2 tablespoons butter in a saucepan and stir in stuffing mix.  Spread crumb mixture over chicken.  Bake at 325 for an hour and a half.

Weekend Wrap Up

Janie had the opening ceremonies for softball on Friday night.  I just love their red and black uniforms!

Nolan had a game at the same time and got the game ball.  He got 2 hits and I hate that I missed it!  Tim said that he was so excited that when they got home he wanted to go out and practice.  That was a needed confidence booster!

We participated in the MDA Muscle Walk on Saturday.  It was nice to see old friends and help a great cause.  Our team raised over $1,200!

The kids really enjoyed seeing Turner Field.  Tim and the kids took a turn in the bullpen.  Tim’s fastest pitch was 59 mph.  He said that he’s hurting today….poor old man.

We left the walk and went straight to the softball field for game 2 in Janie’s tournament.  They won the game so had to play another one immediately following.  Unfortunately, they lost the 3rd game.

Tim and I had a afternoon movie date yesterday.  Guess what we saw…….Divergent, of course!  I really enjoyed it.  I thought the casting was spot-on.  The chemistry between Tris and Four was great!  I’m looking forward to the next one.

My Favorite Chicken Salad Recipes

I really love chicken salad.  Here are my two favorite chicken salad recipes.

Cookie Party 2013 002

Cashew Chicken Rotini Salad – This recipe came from my Aunt Sheila.  I make it for my Christmas Cookie Exchange every year.  I makes a ton and is always a big hit!

1 (16 oz) package rotini or spiral pasta

4 cups cubed chicken (cooked)

1 (20 oz) can pineapple tidbits (drained)

1.5 cups sliced celery

.75 cup thinly sliced green onions

1 cup seedless green grapes

1 cup seedless red grapes

1 (6 oz) package dried cranberries

1 cup ranch dressing

.75 cup mayo

2 cups salted cashews

Cook pasta.  Meanwhile in a large bowl combine chicken, pineapple, celery, onions, grapes, and cranberries.  Drain pasta and rinse in cold water.  Add to chicken mixture.  In a small bowl, whisk ranch and mayo.  Pour over chicken mixture and toss to coat.  Cover and refrigerate for at least one hour.  Stir in cashews just before serving.  Makes 12 servings.

Chicken Salad Sandwiches – This recipe came from my best friend’s mom.  I think we make it for every wedding/baby shower that we have hosted.  However, I don’t have a picture.  I know that makes me a horrible food blogger, sorry!

2.5 cups diced, cooked chicken

1.5 cups chopped celery

1 cup sliced white grapes
1 cup mayo
1 tsp salt
.5 cup sour cream
2 chopped boiled eggs
white pepper to taste
.5 cup slivered almonds

Mix and chill.  Serve on mini croissants.

Midweek Randoms

  • How do families have more than two children in sports?  This baseball/softball season has been crazy and it just started.  I don’t think there has been a practice/game that our family has been able to attend together.  Divide and conquer is the name of our game!
  • I finished Scandal (a couple of week ago actually) so now I’m desperately waiting for reruns so I can catch up on Season 3.  I found out that BET plays some and I’ve been recording them so hopefully I can piece the season together.  I need my Olivia Pope fix!
  • I cannot believe that it’s time to register this baby for Kindergarten!  I’m thrilled about the raise we’ll be receiving when we no longer have to pay for childcare.  The end of that weekly payment is near!Zoo 018
  • Nolan and I were searching for St. Patrick’s Day treats for Janie’s class today since she missed the last 2 days of school.  I thought we would find some on clearance but no such luck (maybe because we aren’t Irish, ha!).  However, the lady in the Publix bakery was just like the commercials!  She offered to make me something but I said that the mini cupcakes were fine and she gave me 24 St. Patrick’s Day rings to put in them.  The Publix bakery is awesome!
  • On the way to the store this morning, Nolan said, “Look, there’s a Catbob.”  It was a Bobcat, not the animal but the equipment.  He makes me laugh!

Janie’s big weekend

Janie celebrated her 8th birthday this weekend.  I cannot believe that I became a mom 8 years ago!  It seems like yesterday and a lifetime ago at the same time.

We had a small party this year so we could go out and do some fun stuff.  We started Friday night with pizza, cake and a movie.  Getting 4 girls to agree on a movie was no small feat!

Saturday morning we went to IHOP (Janie’s choice because of their syrup varieties) and out for manicures.

After the party, Janie had a reconciliation retreat in preparation for her First Communion in May.  I expected her to be nervous but she really wasn’t!  She went in a sinner and came out a saint.

Of course, her saintliness didn’t last long because she and Nolan started fighting shortly after we got home.

We had a small celebration for her at my in laws yesterday but Janie spent most of the afternoon on the couch.  She said that her throat hurt and sure enough, she woke up with a fever this morning.  We just got back from the doctor and she has strep.  I’ve said it before, my kids always get sick on holidays and birthdays!  I guess the excitement is too much.  At least she gets to spend this cold, rainy birthday watching movies in bed.
